tomato, diced 5 oz.
mozzarella cheese, shredded 1/4 cup(s)
basil 1 1/2 Tbs.
oregano, dried 2 tsp.
garlic powder 1 tsp.
salt 1/4 tsp.
Alfredo sauce 1 1/2 cup(s)
fresh basil leaves, cut into chiffonade 2 Tbs.

directions

  • 1.Preheat the oven to 350F.
  • 2.Spray shallow baking pan with non-stick spray and add egg.
  • 3.Bake until firm, about 15 minutes in a 9x9 pan.
  • 4.Allow the cooked eggs to cool and add the tomatoes, mozzarella, dried basil, oregano, garlic, and salt.
  • 5.Fill manicotti shells with custard mixture and place in baking dish.
  • 6.Cover with Alfredo and make 35-40 minutes until shells are tender.
  • 7.Garnish with additional tomatoes and fresh basil.
