ciabatta 2 slice(s)
olive oil, divided 4 tsp.
Chihuahua cheese, shredded 1 oz.
chipotle peppers in adobo sauce, minced 1/4 tsp.
mayonnaise 1 3/4 tsp.
pork carnitas, heated 2.5 oz.
pickled red onions 1.5 oz.
cooking spray as needed

directions

  • 1.Brush both sides of bread slices with 2 tsp. olive oil.
  • 2.Heat 2 tsp. oil in sauté pan over medium heat. Add eggs. Cook 3 minutes, stirring occasionally, until eggs are almost cooked.
  • 3.Top eggs with cheese. Cook 1 minute.
  • 4.In small bowl, mix chipotle peppers and mayonnaise for aioli. Set aside.
  • 5.Assemble sandwich: Place carnitas on bottom bread slice.
  • 6.Top with eggs and pickled onions.
  • 7.Spread chipotle aioli on top piece of bread. Place top bread on sandwich.
  • 8.Heat panini press. Coat with cooking spray.
  • 9.Place sandwich in panini press. Cook 2 minutes, or until hot.
