huevos con chorizo sandwich

rustic submarine roll, 3'' 1
cooking spray as needed
chorizo sausage, cooked 2 oz.
shredded Mexican white cheese blend 1 oz.
fresh tomato, diced 1 oz.
green onions, chopped 1
fresh jalapeños, small-chopped to taste
sour cream 1 Tbs.

  • 1.Preheat broiler.
  • 2.Slice open sub roll. Toast until lightly golden.
  • 3.Coat bottom of small nonstick sauté pan with cooking spray. Add eggs. Over medium heat, scramble eggs until slightly underdone.
  • 4.Layer eggs on toasted open sub roll.
  • 5.Add chorizo and shredded cheese.
  • 6.Place open-faced sandwich in broiler. Cook about 1 minute, or until cheese is melted and golden brown.
  • 7.Remove sandwich from broiler.
  • 8.Top with tomatoes, green onion and jalapeños.
  • 9.Drizzle sour cream over vegetables and serve open-faced.
