fresh tomato, diced | 1 oz. |
green onions, chopped | 1 |
fresh jalapeños, small-chopped | to taste |
sour cream | 1 Tbs. |

directions
- 1.Preheat broiler.
- 2.Slice open sub roll. Toast until lightly golden.
- 3.Coat bottom of small nonstick sauté pan with cooking spray. Add eggs. Over medium heat, scramble eggs until slightly underdone.
- 4.Layer eggs on toasted open sub roll.
- 5.Add chorizo and shredded cheese.
- 6.Place open-faced sandwich in broiler. Cook about 1 minute, or until cheese is melted and golden brown.
- 7.Remove sandwich from broiler.
- 8.Top with tomatoes, green onion and jalapeños.
- 9.Drizzle sour cream over vegetables and serve open-faced.
