corn kernels, roasted 2 oz.
red and green pepper, finely diced 3 oz.
red onion, diced 1 oz.
black beans, cooked 2 oz.
chorizo sausage, cooked 3 oz.
salt to taste
pepper to taste
flour tortilla, fried into a bowl 1
sharp Cheddar cheese, shredded 3 oz.
jalapeño pepper, chopped 1 oz.
cilantro, chopped 1 oz.

  • 1.Pour olive oil into hot sauté pan; add corn, green/red peppers and onion. Cook until onion is tender.
  • 2.Add black beans and chorizo sausage. Cook until mixture is hot.
  • 3.Add eggs and season with salt and pepper. Stir until eggs are cooked.
  • 4.Place tortilla bowl on dinner plate. Place hot egg mixture into tortilla bowl.
  • 5.Top egg mixture with shredded cheese, jalapeños and cilantro. Serve immediately.
