baby portabella mushrooms 1 lb(s).
red pepper, diced 1/8 cup(s)
green pepper, diced 1/8 cup(s)
onion, diced 3 Tbs.
garlic powder 1/8 tsp.
salt 1/4 tsp.
pepper 1/8 tsp.

directions

  • 1.Preheat oven to 375° F.
  • 2.Wash the mushrooms, remove and reserve the stems.
  • 3.Chop mushrooms stems and sauté in a hot skillet with the peppers, onions, salt, pepper, and garlic until soft.
  • 4.Add eggs and stir until set.
  • 5.Place mushroom caps in baking dish coated with cooking spray. Spoon mixture into caps.
  • 6.Bake for 15 minutes until heated through.
