mayonnaise 1/2 tsp.
flour tortilla, 6'' 2
Cheddar cheese, shredded 1.5 oz.
refried black beans 1 oz.
pork carnitas, heated 2.5 oz.
fresh cilantro, chopped to taste
pico de gallo 2 Tbs.
sour cream 1 1/2 tsp.

  • 1.Spread ¼ tsp. mayonnaise in thin layer on 1 tortilla.
  • 2.Place tortilla in sauté pan, mayonnaise side down.
  • 3.Sprinkle shredded cheese on tortilla. Top with scrambled eggs. Add refried beans.
  • 4.Add carnitas and cilantro.
  • 5.Cover with remaining tortilla.
  • 6.Spread remaining ¼ tsp. mayonnaise on top of tortilla.
  • 7.Over medium heat, cook until browned on both sides.
  • 8.Remove from pan.
  • 9.Cut into 8 equal wedges.
  • 10.Garnish with pico de gallo. Add a dollop of sour cream or drizzle on top.
  • 11.Serve 4 wedges on plate.
