brown sugar 1/2 cup(s)
baking powder 3 tsp.
ground allspice 2 tsp.
ground cinnamon 1 tsp.
salt 1/2 tsp.
butter or margarine, melted 1/4 cup(s)
milk 1/2 cup(s)
pecans, chopped 1/2 cup(s)

  • 1.Choose muffin pans with 12 cups of 2” diameter. Grease 2 pans.
  • 2.In medium bowl, combine flour, brown sugar, baking powder, allspice, cinnamon and salt.
  • 3.In large bowl, combine sweet potatoes, eggs, melted butter and milk. Blend well.
  • 4.Add flour mixture to sweet potato mixture; stir just enough to moisten dry ingredients. Stir in pecans.
  • 5.Fill muffin cups 2/3 full.
  • 6.Bake at 400º F for 20 minutes, or until tops spring back when lightly touched. Remove to wire rack to cool.
  • 7.Top with turbinado sugar.
